- 400 g dried rice vermicelli
- 350 g boneless chicken thigh (cut into thin strips)
- 300 g cabbage (shredded)
- 1 carrot (julienned)
- 150 g green beans (sliced diagonally)
- 1 onion (sliced)
- 4 cloves garlic (minced)
- 2 limes (cut into wedges)
Seasoning
- 3 tbsp cooking oil
- 4 tbsp light soy sauce
- 2 tbsp oyster sauce
- 700 ml water
- to taste salt
- 1 tsp black pepper

Steps

Step 1
Inspect chicken
Thaw chicken fully in the refrigerator, discard any smelly or slimy meat and pat dry.

Step 2
Slice chicken
Cut 350 g chicken thigh into 1 cm strips.

Step 3
Soak noodles
Soak rice vermicelli in room-temperature water for 8 minutes until flexible, then drain.

Step 4
Prepare vegetables
Prepare cabbage, carrot, beans, onion and garlic as specified; cut limes into wedges.

Step 5
Mix sauce
Mix 4 tablespoons light soy, 2 tablespoons oyster sauce and 500 ml water; reserve 200 ml water.

Step 6
Cook chicken
Heat 2 tablespoons oil and stir-fry chicken for 5 minutes until fully cooked with no pink.

Step 7
Sauté aromatics
Add remaining 1 tablespoon oil and sauté onion and garlic for 2 minutes.

Step 8
Stir-fry firm vegetables
Add carrot and green beans and stir-fry for 3 minutes.

Step 9
Add cabbage and sauce
Add cabbage and the 500 ml sauce mixture; simmer 2 minutes.

Step 10
Add noodles
Add drained noodles and toss over medium heat so they absorb the broth.

Step 11
Finish noodles
Cook 5–7 minutes, adding reserved 200 ml water gradually if needed, until noodles are tender and dry.

Step 12
Season and serve
Add black pepper, taste and add salt only if needed; serve with lime wedges.
Common mistakes
- Over-soaking makes rice vermicelli break.
- Adding all liquid at once can make noodles soggy.
Tips
Soak only until flexible.
Taste before adding salt because the sauces are salty.
