Steps

Step 1
Peel and cut potatoes into three-centimetre pieces
Peel all of the potatoes and cut them into even 3 cm pieces.

Step 2
Thickly slice smoked sausage
Cut all of the smoked sausage into 1 cm rounds.

Step 3
Chop onion, pepper and garlic
Dice the onion and bell pepper into 1 cm pieces and mince both garlic cloves.

Step 4
Brown sausage in oil
Heat all of the oil in a red enamel Dutch oven and brown the sausage rounds for 4 minutes.

Step 5
Remove sausage and soften onion and pepper
Transfer the browned sausage to a clean bowl, then soften the onion and pepper in the same red Dutch oven for 5 minutes.

Step 6
Add garlic and paprika and stir until fragrant
Add the minced garlic and all of the paprika and stir for 30 seconds without scorching.

Step 7
Add tomatoes and scrape the pot base
Add all of the tomatoes and scrape the browned residue from the base of the same pot.

Step 8
Add potatoes, stock, salt and pepper
Add the potatoes, all of the stock, salt and pepper and stir once to combine.

Step 9
Bring to a boil then lower the heat
Bring the uncovered stew to a boil, then immediately lower the heat to a gentle simmer.

Step 10
Cover and simmer until potatoes are nearly tender
Cover the same red Dutch oven and simmer for 20 minutes, until the potatoes are nearly tender.

Step 11
Return sausage and cook until potatoes are tender
Return all of the browned sausage and simmer uncovered for 8 minutes, until the potatoes are tender and sausage is piping hot.

Step 12
Rest five minutes before ladling into bowls
Remove from the heat, rest for 5 minutes, and ladle equal amounts of potato, sausage and sauce into four bowls.
Common mistakes
- Paprika scorches and turns bitter over high dry heat, and returning the sausage too early dries it out.
Tips
Add tomatoes immediately after fragrant garlic and paprika to lift the fond; return sausage only when potatoes are nearly tender.
