Steps

Step 1
Prepare the sausages
Halve the cooked pork sausages and pat their surfaces dry.

Step 2
Prepare the vegetables
Dice the onion and carrot and mince the garlic.

Step 3
Rinse the beans
Tip the white beans into a strainer, rinse with water, and drain well.

Step 4
Brown the sausages
Heat half the oil in a deep frying pan and brown the sausages for 5 minutes, then remove.

Step 5
Soften the vegetables
Add the remaining oil, onion, and carrot and cook for 6 minutes until softened.

Step 6
Cook the seasoning
Add garlic, tomato paste, thyme, and paprika and stir for 1 minute.

Step 7
Add tomatoes and stock
Pour in the chopped tomatoes and chicken stock, stir, and bring to a boil.

Step 8
Simmer the sausages
Return the sausages, cover, and simmer over low heat for 15 minutes.

Step 9
Add the white beans
Add the drained white beans, fold gently, and simmer for another 8 minutes.

Step 10
Check the sausages
Cut the thickest sausage to confirm the centre is steaming hot while the casserole gently bubbles.

Step 11
Reduce and season
Simmer uncovered for 5 minutes to thicken slightly, then season with salt and black pepper.

Step 12
Serve the casserole
Ladle sausages, white beans, and tomato sauce into a serving bowl and serve hot for four.
Common mistakes
- Unrinsed canned beans make the sauce salty and cloudy.
- Hard boiling breaks the beans apart.
Tips
Cooked sausages shorten the household cooking time.
The flavours blend further after chilling overnight.
