Steps

Step 1
Cut aromatics
Dice onion to 3 mm and mince ginger and garlic finely.

Step 2
Chop tomatoes
Wash and dice tomatoes to 5 mm; wash and chop coriander leaves.

Step 3
Measure spices
Combine cumin, ground coriander and turmeric in a bowl; reserve garam masala for the finish.

Step 4
Start eggs and onions
Lower eggs gently into boiling water for 10 minutes; meanwhile heat oil and fry onion over medium heat for 3 minutes.

Step 5
Fry ginger and garlic
Once onion softens, add ginger and garlic for 1 minute without blackening.

Step 6
Bloom spices
Lower heat, stir cumin, coriander and turmeric for 30 seconds, then add tomatoes.

Step 7
Cook tomato sauce
Add salt and cook tomatoes 3 minutes, crushing them; add 150 ml water and bring to a simmer.

Step 8
Simmer curry
Cover and simmer over medium-low for 5 minutes, stirring occasionally; watch the egg timer meanwhile.

Step 9
Cool and peel eggs
After 10 minutes, remove eggs and rinse under cold water for 2 minutes, then peel while sauce simmers.

Step 10
Halve and check
Halve eggs and check both whites and yolks are fully set; cook further separately if needed.

Step 11
Warm eggs
Lay eggs cut side up in curry, add garam masala and warm gently for 2 minutes without vigorous stirring.

Step 12
Serve
The sauce should be thick but spoonable; add coriander leaves and serve 4 portions hot.
Common mistakes
- Spice powders burn bitter; use low heat for only 30 seconds.
- Large tomato pieces take longer to soften; dice to 5 mm.
- Stirring hard breaks eggs; warm them cut side up.
- Counting sauce time alone misses eggs; time both pots together.
Tips
Use ripe tomatoes cut small so they soften quickly; ripeness also controls acidity. This recipe contains no chilli powder. Adults wanting heat can add it to their own portion, keeping the shared pan mild. Place peeled eggs on a clean plate, away from raw shells and vegetable-washing water.
