Common mistakes

  1. Ripe soft mango becomes watery; use firm green mango.
  2. Wet herbs dilute dressing; drain thoroughly first.
  3. Do not add uncooked dried shrimp; boil then toast them.
  4. Dressing too early softens the salad; toss just before serving.

Tips

Mango acidity varies; dissolve the measured sugar and fish sauce into the dressing and taste with a little mango before adding more fish sauce. Add peanuts and shrimp near serving to retain texture. This dish contains peanuts, shrimp and fish sauce; check diners' dietary needs before serving.
