Steps

Step 1
Prepare the Ingredients
Prepare the tofu, minced pork, spring onion, ginger and seasonings. Set up the steamer and steaming plate before cooking.

Step 2
Drain the Tofu
Take the tofu out of the box, carefully pour away extra water, and place it on a deep plate.

Step 3
Cut the Tofu
Cut the tofu into thick slices or large cubes. Do not cut it too small, or it may break apart after steaming.

Step 4
Prepare the Minced Pork
Put the minced pork into a large bowl. Check for large clumps and loosen them with chopsticks if needed.

Step 5
Add Seasoning
Add light soy sauce, oyster sauce, sugar, cornstarch, water, white pepper and sesame oil. Mix evenly.

Step 6
Marinate the Pork
Let the minced pork marinate for about 10 minutes so the flavour becomes more even.

Step 7
Spread Pork on Tofu
Spread the minced pork evenly over the tofu. Do not pile it too thick, or the center will be harder to cook through.

Step 8
Prepare the Steamer
Add enough water to the steamer, place the steaming rack inside, and bring the water to a boil.

Step 9
Place Dish in Steamer
After the water boils, carefully place the tofu and pork dish into the steamer.

Step 10
Steam Until Cooked
Cover with the lid and steam over medium heat for about 10 to 12 minutes, until the minced pork is fully cooked.

Step 11
Check Doneness
Make sure the minced pork is no longer pink and the tofu is hot. If there is too much water on the plate, carefully pour away a little.

Step 12
Add Spring Onion
Sprinkle chopped spring onion on top. You may add a little cooked oil or light soy sauce. Serve hot.
Common mistakes
- The minced pork is spread too thick, so the center is hard to cook through.
- The tofu is cut too small and breaks apart easily after steaming.
- The seasoning is too salty because tofu absorbs flavour easily.
- Steaming too long makes the tofu release too much water.
- Putting the dish in before the water boils makes the timing inaccurate.
- Not checking the pork may leave the center undercooked.
Tips
Steamed Tofu with Minced Pork looks simple, but the most important points are not spreading the pork too thick and making sure the water is boiling before steaming. When cooking it for your employer's family for the first time, make the flavour lighter and do not add too much soy sauce or oyster sauce. Before serving, always check that the pork is fully cooked, especially in the thicker center area.
