Steps

Step 1
Check fish
Pat fish dry and feel along the flesh to remove remaining pin bones.

Step 2
Portion fillets
Cut into four fillets about 1.5 cm thick, splitting thicker sections horizontally.

Step 3
Mix marinade
Mix lemon juice, ginger, garlic, cumin, coriander, turmeric, chilli and salt in a shallow dish, leaving out the flour.

Step 4
Marinate briefly
Coat both sides of the fish and refrigerate for 10 minutes; this is included in preparation time.

Step 5
Cut lemon wedges
While the fish marinates, cut the half lemon into four wedges and prepare a clean serving dish and fish spatula.

Step 6
Dust with flour
Remove fish from the fridge, dust both sides with chickpea flour and pat into a thin coating without dry heaps.

Step 7
Heat oil
Heat oil in a large pan over medium heat for about 1 minute until shimmering, not smoking.

Step 8
Lower fish into pan
Lay fish into the pan away from you, leaving space between pieces; oil should only cover the base of the fillets.

Step 9
Fry first side
Fry over medium heat for 3–4 minutes until the bottom forms a golden crust before turning.

Step 10
Fry second side
Turn gently with a fish spatula and fry the second side for 3–4 minutes; avoid repeated turning.

Step 11
Check doneness
The thickest centre should reach 63°C, with opaque flesh that flakes easily; keep cooking if needed.

Step 12
Serve fish
Transfer to a clean plate and serve immediately with lemon wedges; do not reuse raw-fish marinade as a sauce.
Common mistakes
- Wet fish sheds its flour coating.
- Long acidic marination weakens the surface.
- Excessive heat burns spices before the centre cooks.
- Turning before a crust sets breaks the fillet.
Tips
Choose evenly thick cod, sole or another firm white fish. The pan must hold all four pieces flat; a smaller pan requires batches and extra time. Use only a thin flour layer to hold the spices, not a thick batter.
