Hong Kong Honey-glazed Char Siu

Ingredients
Main ingredients
- 800 g pork shoulder (cut into long strips about 5 cm wide)
- 3 cloves garlic
Marinade
- 3 tbsp hoisin sauce
- 3 tbsp honey
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 pieces red fermented bean curd
- 1 tbsp sugar
- 3 tbsp water

Steps

Step 1
Check and cut pork
Thaw pork in the refrigerator, inspect and cut into long strips about 5 cm wide.

Step 2
Mince garlic
Peel and finely mince the garlic.

Step 3
Mix char siu marinade
Mix hoisin, honey, light soy, dark soy, oyster sauce, fermented bean curd, sugar, water and garlic.

Step 4
Marinate the pork
Coat pork evenly with marinade, cover and refrigerate. Time: 480 minutes.

Step 5
Preheat the oven
Place a rack in the middle and preheat the oven to 200°C.

Step 6
Prepare the tray
Line a baking tray with foil and add a little water to catch drips.

Step 7
Arrange the pork
Space pork strips apart on the tray and brush with marinade.

Step 8
Bake the first side
Bake on the middle rack at 200°C until the surface begins to caramelize. Time: 20 minutes.

Step 9
Turn and baste
Turn with tongs, brush with boiled marinade and continue baking at 200°C. Time: 15 minutes.

Step 10
Finish with honey glaze
Brush with honey, raise the oven to 220°C and bake until the edges caramelize, watching closely. Time: 5 minutes.

Step 11
Check pork doneness
Probe the thickest strip with a thermometer and confirm clear juices. The centre must reach 75°C.

Step 12
Rest, slice and serve
Rest the char siu, slice across the grain and spoon over cooked tray juices. Time: 10 minutes.
Common mistakes
- Pork cut too thin dries out.
- Honey added too early can burn.
Tips
Leave space between strips for even browning.
Rest before slicing to retain juices.
