Steps

Step 1
Wash the kabocha
Scrub the skin well, dry it and set it on a stable cutting board.

Step 2
Cut it safely
Ease a heavy knife through the squash, halve it and scrape out seeds and fibres with a spoon.

Step 3
Make even pieces
Cut the skin-on squash into 4 cm pieces and trim sharp corners so they resist crumbling.

Step 4
Mix the braising liquid
Combine dashi, soy sauce, mirin and sugar until the sugar dissolves.

Step 5
Bloom the ginger
Heat the oil in a wide pan over medium heat and stir the ginger for about 20 seconds.

Step 6
Cook the chicken
Add minced chicken, break it into small morsels and cook until no pink remains on the surface.

Step 7
Add the broth
Pour in the seasoned dashi, scrape up the chicken from the pan base and bring to a boil.

Step 8
Skim carefully
Simmer for 2 minutes and remove surface foam and excess fat with a clean spoon.

Step 9
Arrange the kabocha
Set pieces skin-side down in one layer, with liquid reaching roughly halfway up their sides.

Step 10
Cover and simmer
Cover and simmer gently for 12 to 15 minutes until a skewer enters the thickest pieces easily.

Step 11
Verify doneness
Confirm the chicken reaches 75°C and move the tender squash gently without crushing it.

Step 12
Thicken and serve
Remix the slurry, add it gradually and swirl the pan until lightly glossy; rest for 2 minutes before serving.
Common mistakes
- Cutting pieces in very different sizes.
- Boiling hard or stirring until the squash breaks.
- Adding settled starch without remixing it.
- Serving before the chicken reaches a safe temperature.
Tips
Keeping the skin down and simmering in one layer protects the shape; stop cooking as soon as a skewer slips into the thickest piece.
