Salisbury Steak with Onion Gravy

Steps

Step 1
Mix the patty base
Gently mix beef with breadcrumbs, milk, egg, 1 finely chopped onion, mustard, Worcestershire, all salt and pepper.

Step 2
Shape eight patties
Divide the mixture into exactly 8 portions and shape oval patties about 2 cm thick.

Step 3
Slice onion and mushrooms
Thinly slice the second onion and slice exactly 200 g mushrooms; keep separate.

Step 4
Heat pan and oil
Heat the frying pan and 1 tablespoon olive oil over medium-high for exactly 2 minutes.

Step 5
Sear first side
Arrange all 8 patties in one uncrowded layer and sear the first side for exactly 4 minutes without moving.

Step 6
Sear second side and remove
Turn and sear the second side for exactly 4 minutes, then move all 8 patties to a clean white plate.

Step 7
Cook onion and mushrooms
Reduce to medium, add unsalted butter and cook onion and mushrooms for exactly 6 minutes until soft and lightly golden.

Step 8
Stir in flour
Add 1 tablespoon flour and stir continuously for exactly 1 minute until no dry flour remains.

Step 9
Add stock and Worcestershire
Gradually add beef stock and the remaining 1 tablespoon Worcestershire; stir and cook exactly 3 minutes until lightly thickened.

Step 10
Return patties and simmer
Return all 8 patties, spoon gravy over them, cover and simmer on low for exactly 10 minutes.

Step 11
Check doneness
Confirm the thickest patty reaches at least 71°C and the gravy lightly coats the back of a spoon.

Step 12
Rest and serve
Turn off the heat and rest exactly 3 minutes, then serve all 8 patties with all onion-mushroom gravy on a white plate.

- Starting the heat before mise en place is complete causes uneven doneness.
- Crowding the pan makes meat release water instead of browning evenly.
