Steps

Step 1
Preheat oven
Preheat a conventional oven to 200°C and prepare the middle shelf for the tray.

Step 2
Check kaya
Use cooked, ready-to-eat kaya; check storage instructions and condition after opening, and use a clean spoon.

Step 3
Measure butter
Measure 40 g cold butter and cut into 8 thin slices, two per sandwich.

Step 4
Keep butter cold
Return butter slices to the refrigerator until assembly so they retain their shape.

Step 5
Arrange bread
Lay out 8 bread slices on the board, check freshness and keep the crusts.

Step 6
Load baking tray
Arrange bread in one layer with small gaps; batch if the tray is small, without overlapping.

Step 7
Toast first side
Bake on the middle shelf for 3–4 minutes until surfaces dry and edges begin to turn golden.

Step 8
Turn and crisp
Turn with tongs and toast 2–3 minutes more; remove when both sides are golden, before dark browning.

Step 9
Release steam
Rest toast on a rack about 30 seconds to release steam; do not stack, and keep it warm.

Step 10
Spread kaya
Spread 12.5 g kaya thinly on one side of each toast slice, nearly to the edges.

Step 11
Add butter and close
Put two cold butter slices on each of four toasts, cap with the other four kaya-side down and press lightly.

Step 12
Cut and serve crisp
Cut each of four sandwiches in half with a serrated knife and serve immediately without sealing in steam.
Common mistakes
- Butter left out early melts; chill until assembly.
- Stacking traps moisture; cool briefly in one layer on a rack.
- Too much kaya hides the crunch; divide the 100 g evenly.
- Timing alone can burn toast; watch colour near the end.
Tips
Use cooked ready-to-eat kaya, never an uncooked egg-and-coconut mixture as spread. The 15-minute schedule assumes the oven fits eight slices at once; smaller trays require additional batches and time. Thin cold butter softens slightly inside warm toast while keeping texture; serve crisp.
